Grandma Syb's Freezer Corn Recipe

Ingredients:

Cobs of Corn
Salt and butter - optional
water

Supplies:

Freezer zip lock bags
salt to taste
large pot
tongs to remove the corn from boiling water
water
cutting board
sharp knives
ice if you want to cool the corn quicker

Steps:

1. Husk your corn by removing the outer layers of corn leaves and removing as many hairs as you can.
2. Bring a large pot to a boil and add the cobs to the boiling water making sure that all the cobs are covered with the water. Cover with a lid.
*Optional add salt to the water while its boiling before you put the corn in*
3. Cook until the water returns to a boil and boil until the cobs color starts to turn slightly golden/ yellow. Usually takes about 2 minutes from the time the corn starts to boil. This process is called blanching.
4. Take the corn out of the pot and allow it cool enough to handle - If you want to cool down the corn on the cob quicker you can dump the corn into a sink or basin filled with cold water and ice cubes. Remove the corn from your sink and allow to drain.
5. To cut the corn off of the cob, place cob on end so it's standing straight up and shave kernels off with a knife onto a large cutting board. a large cake tin or into an angel food pan.
6. Put about 2 cups of corn into individual bags. Squeeze all the air out, seal then push to flatten each bag.
7. Freeze flat on a cookie sheet to keep each bag flat, then stack to store in freezer.

How to Serve:

1. Thaw out the corn and place in a cooking pot.
2. Add approximately 1 cup of water and cook corn until it has boiled for 2 to 3 minutes.
3. Remove from the heat and add 2 to 3 tablespoons of butter and a half a teaspoon of salt or until desired flavor.
4. Stir until the corn kernels are covered with the butter and salt.
5. Place in a bowl and serve with your meal.

Grilled Corn

This is a perfect and simple way to enjoy corn straight off of the BBQ.

Ingredients
Cobs of Corn

Steps
1. Heat up your barbecue
2. Place the corn on the hot side of the grill and let cook for about 10 total minutes
3. Remove from the grill and let it cool for 10 minutes
4. Serve immediately with butter and salt

Microwave Corn

Ingredients
Un-husked cobs of corn

Steps
1. Place your un-husked corn in the microwave
2. Microwave for 3 to 5 minutes
*Microwave times may vary based upon size of cob*
3. Allow your corn to cool- once the silk and top leaves are cool enough to handle, quickly take the husks off
4. Serve immediately with butter and salt

Boiled Corn

This is one of the best and easiest ways to cook corn. It is a staple at all of our family Sunday dinners!

Water
Corn
Butter & Salt- Optional

Steps
1. Husk your corn
2. Boil hot water
3. Place the husked corn into boiling water and let it cook for 4-8 minutes
4. Serve immediately with butter and salt
